PEANUT BUTTER & CHOCOLATE ALMOND GRANOLA

It’s salty, sweet, and loaded with gooey peanut butter and chocolate almond bits. whats not to love about this crunchy granola?


You can make this peanut butter and chocolate almond granola in less than 30 minutes with just 6 ingredients!


What you will need:


Rolled oats: this will be your granola base


Unsalted peanut butter: drizzled to your preferred amount!


Bittersweet dark chocolate with almonds: adds a light sweetness and nut crunch to balance the granola


Maple syrup: light sweetener and helps the granola stick more together


Coconut oil: melted down and poured over to combine all the ingredients & prep for the oven


Pink Himalayan salt: brings out the flavor of the peanut butter & balances the sweet

Making granola at home is a simple and easy alternative to buying store bought brands. It also gives you the freedom of selecting your own flavors, and skipping any refined sweeteners and poor quality oils which is why I’m a big fan of homemade granola. I’m pretty simple when it comes to flavors, and I always love including some type of nuts for an added crunch. This recipe includes dark chocolate covered almonds which are sooo yummy!


I’m a big peanut butter lover so this recipe was chosen so I can get my daily dose of spread in a tasty way. Most of the ingredients are pantry essentials and the bittersweet chocolate chunks do just the trick to add sweetness without the need for refined sugar. There’s really no better crunch than granola that’s been drizzled with that gooey peanut-y spread!


Recipe

6 cups rolled oats

1/cup coconut oil

1/4 cup maple syrup

your favorite peanut butter

1 bar of bittersweet dark chocolate with almonds

Salt to taste


Method

  1. Preheat your oven to 350 F degrees

  2. In a large mixing bowl pour in the oats, and liquids and combine till incorporated

  3. Prep your peanut butter, if it is not liquid form, microwave it for 5-10 second increments till it melts down, checking to make sure you don’t overheat it

  4. Pour the oat mixture onto a baking tray and drizzle the peanut butter on top covering as much granola as you prefer

  5. Bake for 25 minutes. Remove and fully let the tray cool. This will help the granola stay together and form crunchy bits.

  6. In the meantime, prep the chocolate. With a large kitchen knife chop the bar into bite-size chunks.

  7. Once the granola has cooled down in a large mixing bowl combine the granola and chocolate and add salt to taste. Enjoy!
