CORNBREAD WITH A KICK

Whether you’re hosting a virtual dinner, craving some southern comfort after multiple zoom meetings or want some classic bread and butter this cornbread can bring a kick of spice to any occasion.


I took this basic cornbread recipe and increased the heat with green chilies and jalapeño sauce. I put this together for some guests, so I made it as a side to pair this with a savory slow-cooked chili. Once the cup of chili met the slice of cornbread and got dipped together it was a comfort food pair in heaven. As promised, the spicy touch from the roasted green chiles was subtle at first and the jalapeño sauce cranked it up.

when I’m craving some classic bread and butter this cornbread can also stand on its own. I make mine with whipped honey butter to offer a sweet and rich flavor which makes the toasty crumbles even more enjoyable. I especially love this delightful duo because you can even drizzle some honey directly on top of the bread when you really wanna go for it.


What you will need:

* Trader Joe's Gluten Free Cornbread Mix

* 1 large egg

* 1 can of Trader Joe's Fire Roasted Diced Green Chiles

* 2 tbs of Trader Joe's Jalapeño Sauce

* 1/4 cup of oat milk

* 1 cup of water

* 2 freshly chopped jalapeños (optional)

*3/4 cup shredded spicy jack cheese (optional)


This mix it’s my top choice for gluten free cornbread mixes because those who have tried this cornbread are usually surprised to find out it’s gluten free. This blend of cornmeal, sugar, and brown rice gives an excellent flavor and texture.



Once you’ve chosen your incorporating ingredients grill your chilies directly in the cast iron skillet to re-roast them.




Set that aside and preheat your oven to 375°F. Next, work on the cornbread mix and prepare the liquid mixture. In a large mixing bowl beat your water, milk, and egg. Add the 2 tbs of jalapeño sauce and stir in. Add the cornbread mix and mix well for 2 to 3 minutes. Next, take your chillies and optional ingredients and add it to the mixture.


Then, pour the batter into the greased skillet and make sure it’s evenly distributed. Let stand for 10 minutes. Bake on the center rack of the oven until golden brown and a toothpick inserted into the center comes out clean. Bake time is 20 to 25 minutes.




Here's the finished product! Cut a slice and enjoy with your dish of choice. I paired mine with some good 'ol beans.


To make the whipped honey butter:

* 1 stick of salted butter

* 1/4 cup of honey

* a pinch of kosher salt


In a small mixing bowl whip the stick of butter using a hand held mixer. Add the 1/4 cup of honey and whip till blended. Place into a serving dish and add a pinch of kosher salt on top.
