There’s nothing better than a comforting bowl of cinnamon apples and granola in the morning to ease you into the weekend. I love how simple, easy, and quick this parfait is to make and can be jazzed up if desired!
What Type of Apples?
For morning parfait bowls I like using Fuji, Gala or Honey Crisp because they’re on the sweeter side of the scale as compared to tart type apples. For this recipe I used Fuji apples and it turned out just as I was hoping! It’s actually better if your apples have been sitting out for a couple days since you’ll be warming them up. This recipe ties together the classic apple crumble filling and oats to create the most perfect breakfast parfait!
Using Honey as a Natural Sweetener
Are you a honey fan like me? I love having a couple types of honey in my pantry as sweetening staples to use for breakfasts and desserts. What types do you like? In my cabinet I currently have three types of honey. One is an unprocessed raw honey that is a good source of antioxidants, a raw avocado flower honey, and a raw wild mountain honey. For this recipe I used the raw avocado honey to add more richness and depth to the sweetness (reminds me of molasses but healthier!). If you’re interested in the brands I have included a photo below. More Deets about Honey
There‘s so many bees working hard for their queen bee so why not show some appreciation and try baking and cooking with honey or using a new type of honey! If you’re interested in learning more about how honey is used in cooking there is a wonderful food series on Netflix titled “Salt Fat Acid Heat” with chef Samin Nosrat. Based on her newly released cookbook, she dedicates each episode to one of the four elements. The “acid” episode is where she meets bee farmers and learns about Mayan honey. It’s a great watch!
Recipe
1 Fuji apple
1 tbsp coconut oil
dash of cinnamon 2 tbsp water
1 tbsp honey
hemp seeds
yogurt of choice
granola of choice
Instructions
Cut the apple into slices
In a medium sauce pan heat up the coconut oil on medium. Add the sliced apples and cook for 5 minutes.
In the meantime prepare your bowl. Add the yogurt, granola, and hemp seeds.
Add the dash of cinnamon, water, and honey to the apples and continue to cook for another 2-4 min till bubbles start to form.
Remove from heat and add mixture to your parfait bowl. Enjoy!
Variations & Additions!
Combine apples with other fruits in season like blueberries, peaches, nectarines.
Add coco nibs and a spoon of chia seeds for a healthy chocolatey addition.
Want more crunch? Add your favorite nuts together with the apples while it’s cooking Toasted nuts are delicious with this!
Swap yogurt for more granola, hemp seeds, and any other multi grain of your choice!
