Vegan Blackened Tofu & Okra Tacos

These tacos will be on your to-do list for Taco Tuesday!! Blackened tofu and okra with edamame, vegan cheese, and a delicious sriracha creme sauce. I’m so excited to share this recipe with you.

Why Tofu and Okra are a Fantastic Pair

I wanted to make a meal that is both tasty and healthy. Combining tofu with okra seemed ideal because you can blacken them together on the grill saving you time and clean up! I marinate both with Tamarin sauce and throw it on the grill its that easy.

Crunchy Tortillas and Sriracha Creme

Two must haves for this recipe are crunchy tortillas that are easily made on the skillet while you are waiting for your tofu and okra to blacken on the grill. In the meantime you can work on the Sriracha creme that is made with only two ingredients. Cashew yogurt and sriracha!! I love this recipe because it takes little to no prep work.

Prep time: 5 minutes. Cook time 20. serves 4.

Ingredients


Tacos

1 cup of okra

1 package of firm tofu

4tbs tamarin sauce

1/2 cup unshelled edamame

corn tortillas

shredded vegan cheese


Sriracha Creme

3 tbs cashew yogurt

2 tsp sriracha


Instructions

  1. cub tofu into one inch cubes.

  2. marinate okra and tofu with 4 tbs of tamarin sauce for 5 minutes.

  3. on medium high heat grill tofu and okra till blackened. Rotate to blacken all sides.

  4. add the edamame to the grill about 5 minutes before the tofu and okra are done.

  5. In the meantime, fry the corn tortillas in a skillet. set aside on a plate with a paper towel. Cover with a tea towel to keep warm.

  6. make the creme. combine the cashew yogurt and sriracha in a small ramekin.

  7. set up the taco station and enjoy!
