Homemade Preserve Series: Mini Bell Peppers

Making your own preserves at home is so simple and easy! I love having these peppers in the fridge to add to salads, sandwiches, rice bowls, pasta...the list goes on!

Grilled to Perfection

The key to a great preserve is the quality of your veggies and the ingredients you combine to make a balanced liquid mixture. It’s best to select organic produce which has less preservatives and tends to be brighter in appearance. Grilling the veggies adds a rich smokey flavor and makes the preserve taste great with so many types of dishes. It’s become my new addition to sandwiches & I love having them each time!


I use sunflower oil for preserving because it does not add an additional flavor which may overpower the main ingredients. It is also a light and healthy alternative. It is available at most grocery stores and is a great price. I purchased my bottle at Trader Joe’s so If you want to check out your local shop you might be able to find mini bell peppers there too!

Simple Prep

After soaking the bell peppers in a vegetable cleaning solution ( I use a bit of vegetable based dish soap and water) rinse and pat dry them so no moisture remains. When you are ready to grill set up your preserving station. Have a cutting board, jars, lids, oil, and spices ready at hand.

Ingredients

2 bags of organic mini bell peppers

1/2 cup of sunflower oil

2/3 cup of water

1/4 cup of white vinegar

about 1/4 tsp of each: salt, pepper, thyme, onion powder, garlic powder


Instructions

  1. soak, rinse, and pat dry mini bell peppers.

  2. prep liquid mixture. Combine oil, water, white vinegar, and spices in another jar and set aside.

  3. heat grill to medium high, oil, and blacken peppers on all sides.

  4. remove from grill and set to cool on the cutting board. Slice peppers diagonally to release air.

  5. fill jar with approximately 1/8 sunflower oil and place peppers into jar. Firmly packing till the jar is full.

  6. add liquid mixture to jar. If jar is not full full remaining space with water.

  7. seal jar and refrigerate for up to a month. The longer it preserves the taster it gets!
